PUMPKIN CASSEROLE 
2 c. boiled pumpkin
1 c. sugar
1/2 c. flour
2 eggs
1 tsp. vanilla
1 pinch of soda
1 c. evaporated milk
1/2 stick butter

TOPPING:

1/2 c. sugar cinnamon

Use square baking dish to melt butter butter in. Pour into dish pumpkin mixture. Top with cinnamon and sugar mixture. Bake at 400 degrees for 30 minutes.

TIP: To clean a pumpkin - Cut in half. Take seeds out with a spoon. Place pumpkin face down on cookie sheet and bake at 350 degrees until tender. Cool and scoop out pulp.
