CRUNCHY CHICKEN PARMESAN | |
2 fryers, cut in parts or 10 boned chicken breasts 2 c. Ritz cracker crumbs 3/4 c. Parmesan cheese 1/4 c. finely chopped parsley 1 clove garlic, crushed 2 tsp. salt 1/8 tsp. pepper 1 c. melted butter Preheat oven to 350 degrees. Blend together Ritz cracker crumbs, Parmesan cheese, parsley, garlic, salt and pepper. Dip each piece of chicken in melted butter and then in crumbs; arrange in a flat Pyrex dish. Pour remaining butter over chicken and bake 1 hour. Do not turn the chicken. |
