WASHINGTON APPLE CAKE 
3 eggs
1 1/2 c. sugar
1 c. vegetable oil
2 c. flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped walnuts or pecans (opt.)
4 c. thinly sliced apples (about 5 med.)
Cream cheese icing (opt.)

Using large bowl, beat eggs well. Combine sugar and oil. Beat into eggs. Stir together flour, cinnamon, baking soda and salt. Add to egg mixture along with vanilla. Stir in walnuts.

Spread apples in buttered 13"x9" pan. Pour batter over apples, spreading to cover. Bake for 1 hour or until done. Remove from oven, cool. Spread with Cream Cheese Frosting or place Cool Whip on top of each piece.

CREAM CHEESE FROSTING: Beat 2 (3 oz.) packages cream cheese until fluffy. Beat in 1/4 cup melted butter. Stir in 1 3/4 cups powdered sugar and 1 teaspoon lemon juice. Spread on cake.
