SHORTBREAD COOKIES 
1 1/4 c. flour
3 tbsp. sugar
1/2 c. butter
Fruit preserves

Mix flour and sugar in a large mixing bowl. Cut in butter until mixture resembles fine crumbs. Form mixture into a ball and knead until smooth.

Shape dough into 1 inch balls. Place 2 inches apart on an ungreased cookie sheet. Using your thumb press an indentation in center of each cookie. Bake at 325 degrees for 18 minutes. Immediately spoon 1/2 teaspoon fruit preserves into each indentation. Cool completely; remove from cookie sheet.
