CARROT RAISIN SALAD | |
Use either dark or golden raisins. The salad supplies over 75% of the U.S. RDA for Vitamin A. 1 pkg. (4-serving size) Jell-O Brand orange flavor sugar free gelatin 3/4 c. boiling water 2 tbsp. raisins 1/2 c. cold orange juice Ice cubes 1/2 c. shredded carrot Completely dissolve gelatin in boiling water. Stir in raisins. Combine juice and enough ice cubes to measure 1 1/4 cups. Add to gelatin; stir until slightly thickened. Remove any unmelted ice. Stir in carrot. Spoon into individual dishes or small serving bowl. Chill until firm, about 2 hours. Makes 2 cups or 4 servings. |
