CARROT, RAISIN, AND ORANGE SALAD | |
1 lb. (about 5) carrots, peeled and grated 1 c. raisins 2 oranges, peeled and sectioned 1 Granny Smith apple, peeled and chopped 1 tsp. ground cinnamon 3 tbsp. fresh lemon juice 1 tbsp. fresh mint, chopped In a large bowl, combine carrots, raisins, oranges, apple, cinnamon, and lemon juice. Add a pinch of salt, if desired. Refrigerate until ready to serve. Just before serving, toss with the mint. Serves 8. |
