ZUCCHINI HOTDISH 
1 med. diced onion
2 tbsp. butter
2 sliced tomatoes (or 1 pt. canned)
1 lg. zucchini, sliced 1/2" thick
Salt & pepper to taste
2 eggs, beaten
1/2 c. grated Parmesan cheese
1 tsp. parsley flakes
Bread crumbs

Cook onion in butter until tender. Add tomatoes and zucchini. Cook for 10 minutes until tender. Add seasonings. Remove from heat and add eggs, cheese and parsley. Place in alternate layers in casserole with bread crumbs. (Top layer should be bread crumbs.) Bake at 325 degrees for 45 minutes.
