FRUIT 'N NUT CHEESE SPREAD | |
6 milligrams sodium per tablespoon. 1 (12 oz.) container no salt added creamed cottage cheese 1 (8 oz.) can crushed pineapple, packed in unsweetened juice 1/4 c. chopped walnuts 1/4 c. chopped raisins 2 tsp. honey In blender container, place cottage cheese; cover. Blend at high speed until smooth, stopping several times to scrape down sides. In sieve, drain pineapple, gently pressing out juice. In medium bowl, stir together blended cottage cheese, drained pineapple, walnuts, raisins and honey. Cover; refrigerate at least 1 hour to blend flavors. Store in refrigerator. Makes 2 cups. |
