GREEK CHICKEN 
1 (5 lb.) roasting chicken
3 tsp. dried oregano
1 1/2 tsp. garlic powder
3/4 tsp. salt
1/2 tsp. pepper
1 30" piece aluminum foil

Wash and dry chicken. With a knife slash chicken at 1 inch intervals, down to bone if possible. Combine spices and rub the chicken cavity and skin with the herb mixture, using all of it.

Place chicken in center of foil, bring 2 ends of foil together over chicken and fold together several times to seal. Seal the ends of foil. Do not fold the foil tightly around the chicken as juice will accumulate in package. Place in roasting pan. Bake for 1 1/2 hours at 400 degrees in an oven.
