ANTIPASTA SALAD 
1 bunch broccoli, separated and chopped
1 head cauliflower, separated and chopped
1 lb. carrots, peeled and sliced
2 cucumbers, peeled and sliced
1 head lettuce, chopped
1 (16 oz.) bottle Zesty Italian dressing
8 oz. sliced pepperoni, chopped
8 oz. grated cheddar cheese

In a large bowl mix the first 4 ingredients. Pour the dressing over and toss. Cover and refrigerate 8 hours or overnight. Before serving, add lettuce, pepperoni and cheese.
