APPLE BUTTER MUFFINS 
1 3/4 c. all-purpose flour
1/3 c. sugar
2 tsp. baking powder
1 tsp. apple pie spice or pumpkin pie spice
1/4 tsp. salt
1 egg, beaten
3/4 c. milk
1/4 c. cooking oil
1/3 c. apple butter
1/3 c. pecans, chopped
2 tbsp. sugar

In a medium mixing bowl combine the flour, sugar, baking powder, pie spice and salt. Make a well in the center. Combine the egg, milk and oil; add all at once to flour mixture. Stir just until moistened. Lightly grease muffin cups or line with paper baking cups. Spoon a rounded tablespoon of batter into each muffin cup. Top each with a rounded teaspoon of apple butter and then with the remaining batter. Combine pecans and the 2 tablespoons sugar; sprinkle on top of batter. Bake in 400 degree oven for about 20 minutes or until golden. Serve warm. Makes 12 muffins

(1/2 tsp. cinnamon, 1/4 tsp. nutmeg, 1/8 tsp. allspice and a dash of ginger). If frozen, to defrost place 2 muffins on a paper towel and microwave on high (100%) for 50 to 60 seconds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
