MEXICAN WEDDING CAKES 
1 c. butter, room temperature
1/2 c. icing sugar
1 tsp. vanilla extract
2 c. all-purpose flour
1/4 c. finely chopped walnuts
3/4 c. icing sugar for dusting

In large bowl beat butter, 1/2 cup sugar and vanilla together. Work flour into the mixture until it holds together. Stir in nuts. Divide mixture into 4 equal portions. Divide each portion into 12 pieces. Using the palms of your hands, roll each piece into a small ball. Makes 48. Place cookies on an ungreased cookie sheet.

Bake in 200 degrees C. or 400 degrees F. oven for 10 minutes. Do not allow cookies to brown. While still hot, toss 1 at a time in icing sugar. The sugar melts to form a slight glaze. Set the cookies to cool on a second cookie sheet on platter. When cool, roll the cookies in additional icing sugar.
