Mix:

4 c. cornmeal
2 c. flour
2 tbsp. sugar
3 tsp. baking powder

Together with:

2 c. milk
4 eggs
1 (30 oz.) can whole kernel corn without liquid
1 sm. can Rotel without liquid

Heat 4 tablespoons oil in two 10 inch pans. Pour oil into mixture and add 2 cups grated longhorn cheese. Pour into pans and bake at 450 degrees for 30 minutes. Ice with refried beans and garnish with sliced jalapenos.
