CHIMICHANGAS 
1 lb. ground beef
1 can tomatoes
1 can green chilies
1 env. taco seasoning mix
12 tortillas
3 c. shredded lettuce
3 c. shredded Cheddar cheese
1/4 c. sliced green onion
1 1/2 c. taco sauce

Brown beef in skillet. Drain fat. Stir in tomato, chilies and seasoning. Simmer 5 minutes. Spoon 1/4 cup of meat mixture along one edge of tortilla. Fold envelope fashion. Roll and secure with toothpicks. Fry in 1 inch of hot oil until golden brown, turning as necessary. Drain on paper towels. Keep warm while preparing others. Before serving, top each with 1/4 cup lettuce, 1/4 cup cheese, green onion and taco sauce.
