FAJITA NACHOS 
1 bag tortilla chips
1/2 lb. American cheese, grated
1/2 lb. Jack cheese, grated
1 can whole chili beans
1 med. onion
1 lg. green pepper
1 lb. beef chuck roast, chopped fine
1 lb. chicken, chopped fine
Olive oil
Sour cream
1 lg. avocado
1 sm. jar your favorite salsa

Preheat oven to 400 degrees. Mash avocado and mix with salsa to make desired consistency. Chill. Arrange 1 layer chips onto oven-proof plate. Top with cheese. Heat beans on stove. Saute onions and pepper and meat in olive oil until done. Put 1 layer beans onto cheese-covered chips. Next, top with meat and vegetables. Top with more cheese. Put into oven until cheese melts. Top with sour cream and avocado mixture. Serves 4.
