RAISIN BREAD PUDDING 
1/4 c. sugar
1/8 tsp. cinnamon
3 c. cubed bread (4 or 5 slices)
1/4 c. raisins
5 eggs
1/2 c. sugar
1 tsp. vanilla
2 c. milk
1/4 c. butter

In 1 1/2 quart casserole combine 1/4 cup sugar and cinnamon, bread cubes and raisins; toss to coat, set aside. In medium mixing bowl blend eggs, 1/2 cup sugar and vanilla. Set aside. In small mixing bowl, combine milk and butter. Microwave at High about 4 minutes or until milk is scalded. Blend into egg mixture. Pour over bread cubes. Cover dish with wax paper. Microwave at Power Level 5 for 15 to 17 minutes or until center is soft set, breaking up and pushing edges toward center with rubber spatula 2 times. Let stand for 10 to 15 minutes. Garnish with whipped cream (optional). Makes 6 to 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
