EGGS CONTINENTAL 
3/4 c. fine bread crumbs
1 c. sour cream
3 slices bacon, diced
4 hard boiled eggs, sliced
1/4 lb. fresh mushrooms, sliced
2 tbsp. fresh parsley
Salt and pepper
1/4 tsp. paprika
1/2 c. grated cheese (Parmesan, Swiss, etc.)

Line a buttered casserole with the bread crumbs and lay eggs on top. Saute the bacon until almost crisp. Add the mushrooms and saute until golden. Drain well. Add the sour cream, parsley, salt, pepper and paprika. Spread over eggs and top with the cheese. Bake for 20 minutes at 375 degrees.
