RICOTTA CHERRY MOUSSE | |
1 lb. whole milk ricotta 2 tbsp. light honey (more to taste) 1-2 tbsp. orange liqueur Few drops of almond extract 1/4 tsp. vanilla extract 2 c. freshly pitted dark cherries 1/2 c. shaved semi-sweet chocolate 1/3 c. slivered, toasted almonds Place the ricotta in a mixing bowl, and whip with an electric mixer at high speed for about 5 minutes. Gradually add the honey and keep beating until it is incorporated. Mix in the liqueur and the extracts. Fold in cherries. Chill, either in individual units or in a serving bowl. Top each serving with shaved or grated chocolate and almonds. |
