RED VELVET CAKE 
1 1/2 c. sugar
2 eggs
2 1/2 c. plain flour
1 1/2 c. cooking oil
1 c. buttermilk
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 tsp. vinegar
Red food coloring as desired

Beat eggs, add sugar, oil and vanilla. Add dry ingredients. Add milk slowly to mixture. Add vanilla and coloring. Bake at 350 degrees for 25 minutes. Makes 3 layers.

FILLING:

1 box powdered sugar
1 (8 oz.) pkg. cream cheese
1 stick butter

Mix softened butter and cream cheese together and add sugar. Add nuts if desired. Spread on layers.
