GUESS AGAIN CARROTS 
2 lb. carrots
2 tbsp. butter
1 med. onion, grated
6-8 oz. sharp cheddar, grated
1/2 tsp. salt
1/8 tsp. pepper

Pare, slice and simmer carrots until tender. Mash carrots. Add butter, onions and cheese. Place carrot mixture in buttered 1 quart casserole. Bake in preheated oven at 350 degrees for 40 minutes until bubbling. Garnish with parsley.

Note: Here's a great time to pull out the food processor, slicing 2 pounds carrots before cooking, grating onion or cheese is fast and easy.
