PARTY BUFFET CARROTS 
12 med. sliced carrots
1/4 c. butter
1 sm. onion, minced
1/4 c. flour
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. dry mustard
2 c. milk
1/4 tsp. celery salt
1/2 lb. sharp cheddar cheese, sliced
3 c. buttered bread crumbs

Cook carrots until done (don't over cook!). Saute onions in butter until clear. Stir in flour, salt, mustard, and milk. Add pepper and celery salt. In 2 quart greased casserole, arrange carrots and cheese in layers. End up with carrots on top. Pour sauce over all. Add bread crumbs. Heat in 350 degrees oven about 25 minutes or until crumbs begin to brown.
