1/2 c. lg. pearl tapioca 1 c. raisins 1 c. dried apricots, chopped 2 tbsp. lemon juice 1 1/2 c. apple, peeled & chopped 1 c. prunes, chopped 1 cinnamon stick 1 (6 oz.) can frozen grape juice Prepare tapioca with water following package directions. Combine the fruit and the cinnamon stick; simmer in water to cover until apples are tender. Add the lemon juice, grape juice concentrate and the prepared tapioca. Simmer for a few minutes. add more water or a little sugar as desired. Serve hot or cold with cream, ice cream or plain. Store in the refrigerator. Fruit soup may also be frozen and kept for a longer time. |
