FRUIT SOUP (SCANDANAVIAN) 
1 1/2 c. water
1/2 c. sugar
1 inch cinnamon stick
1 1/2 c. cranberry juice
1 c. peach or apricot nectar
1 c. pineapple juice
1 c. orange juice
1/4 c. quick cooking tapioca
Fresh or frozen fruit: cherries, blueberries, strawberries (raisins or other dried fruit)

In a saucepan, boil water, sugar and cinnamon stick, simmer 5 minutes. Remove cinnamon. Add juices and bring to a boil. Stir in tapioca, simmer 5 minutes, stir occasionally. Add fruits, cherries, blueberries are the best. Serve hot or the next day cold. Serves: 12, 87 calories a cup.
