FARMHOUSE RIBS | |
2 1/2 to 3 lb. country style pork ribs 1 tbsp. oil 1 med. onion, sliced 2 apples, cut into wedges SAUCE: 1/3 c. mild soy sauce 1/3 c. tomato ketchup 1 tbsp. dry mustard 3 tbsp. brown sugar 1 clove garlic, minced Dash black pepper 3 tbsp. apple cider vinegar 2 tbsp. chopped celery Trim off excess fat from ribs. In a large skillet, brown ribs in oil. Place in a roasting pan. Place apple wedges and onion rings over ribs in pan. Combine all ingredients for sauce. Baste ribs with sauce. Cover with foil and bake at 350 degrees for about 50 minutes. Uncover. Pour remaining sauce over ribs. Bake at 350 degrees for another 40 to 50 minutes. The ribs should be nicely browned and tender. |

About thirty minutes into the baking, my son abandoned his computer game (no, really!) wanting to know what smelled so good and when could he eat it.
I followed the recipe pretty closely, except I used dark soy sauce since that's what I had on hand. Did not adjust the cooking time at all, and the roast came out perfectly cooked.
Will definitely do this again, with actual country ribs this time, and light soy sauce. The BBQ sauce is very hearty. The only thing I added to my serving was a nice dollop of Habanero hot sauce, which nicely finished the dish IMO.
