PENUCHE CANDY | |
2 ample tbsp. butter 2 c. brown sugar 1/2 tsp. baking soda 1 c. chopped walnuts 1 c. half and half 1 c. white sugar 1 tsp. vanilla Pinch of salt Melt butter over low heat and then stir in sugars. Add cream in which soda has been dissolved. Mix well. Wipe down sugars from sides of pan. Heat slowly to boiling, stirring until sugar is dissolved. Increase heat and boil rapidly, stirring gently to prevent sticking. Cook to firm ball stage (248 F.). Remove from heat and sprinkle salt over it. Let stand until cool. Add vanilla and beat, add nuts. Beat until it has lost its gloss and is creamy. Put in greased pan. Cut in squares. This candy sometimes is difficult to make but worth the effort because it is very tasty. |
