FAST AND FABULOUS CHICKEN CASSEROLE | |
2 c. cooked chicken, diced (about 4 med. sized chicken breasts, skinned) 2 c. diced celery 1/2 c. slivered almonds or cashew nuts 1 c. mayonnaise 2 tbsp. lemon juice 2 tbsp. chopped black olives 1/2 tsp. salt 8 oz. grated cheddar cheese 1/2 c. bread crumbs Combine chicken, celery, nuts, mayonnaise, lemon juice, olives and salt. Pile lightly in an ungreased 8 inch baking dish. Sprinkle with cheese and top with bread crumbs. Bake in a 425 degrees oven for 15 minutes. Great leftover as a cold salad! Serves 4. Or substitute leftover turkey. |
