FAST AND FABULOUS CHICKEN
CASSEROLE
 
2 c. cooked chicken, diced (about 4 med. sized chicken breasts, skinned)
2 c. diced celery
1/2 c. slivered almonds or cashew nuts
1 c. mayonnaise
2 tbsp. lemon juice
2 tbsp. chopped black olives
1/2 tsp. salt
8 oz. grated cheddar cheese
1/2 c. bread crumbs

Combine chicken, celery, nuts, mayonnaise, lemon juice, olives and salt. Pile lightly in an ungreased 8 inch baking dish. Sprinkle with cheese and top with bread crumbs. Bake in a 425 degrees oven for 15 minutes. Great leftover as a cold salad! Serves 4. Or substitute leftover turkey.

This looks like a basic boring casserole, but what a surprise! I made it for my husband and I, WE loved it; then made it for a Monday Night Football Party (I had 4 cups of cooked chicken I had to make something out of!) Everyone (even the kids) LOVED it! First time that friends asked me for the recipe for a "casserole".!! It is now in the favorites of my recipe collection! Thank you!
