ZUCCHINI RELISH 
3 lg. zucchini
1 bell pepper
2 lg. onion
1/3 sweet red pepper
1/4 c. salt
1 1/3 c. vinegar
1 2/3 c. sugar
1 tbsp. celery seed

Grate vegetables; add salt. Cover with water and soak 3 hours; drain. Boil vinegar, sugar, and celery seed and 2/3 cup water. Add zucchini mixture and boil just until zucchini is clear, stirring constantly. Refrigerate or seal in canning jars.
