ZUCCHINI RELISH 
4 qt. zucchini, ground
6 qt. green or red sweet peppers
6 med. onions
1/2 c. caning salt
5 c. sugar
3 c. vinegar
2 tsp. turmeric
2 tsp. celery seed
2 tbsp. mustard seed

Grind zucchini, peppers, and onions and mix with salt. Let stand for 3 hours. Drain well and add sugar, vinegar and spices. Bring to boil and simmer 20 minutes. Pour into jars and seal while hot. Very good. Yield 10 to 12 pints.
