FISH CHOWDER 
1 lb. fresh fish fillet or equivalent conch, whelk or combination
3 c. milk
3 oz. salt pork, diced
1 med. onion, chopped
1-2 potatoes, diced
1/2 tsp. salt
Scant c. water
Pepper

In a heavy skillet fry salt pork until browned. Add onion and cook until transparent. Add potatoes, salt, pepper, and water. Cook about 5 minutes. Add fish, cover and cook until potatoes are done and fish is tender, 10-15 minutes. Break fish into course flakes. Add milk and heat but DO NOT BOIL. For added flavor float large pat of butter on top.
