SPEEDY CHOP SUEY 
1 lb. beef, pork or veal, cut in 1/2 inch cubes
2 tbsp. shortening
1 c. water
1/2 tsp. salt
1 c. sliced celery
1 c. sliced onion
1 (6 oz.) can broiled sliced mushrooms, undrained
1/4 c. soy sauce
3 tbsp. cornstarch
1 (1 lb.) can bean sprouts, drained
4 c. hot cooked rice

Brown meat slowly in hot shortening in 4 quart pressure pan. Add water, salt and dash pepper. Close cover securely. Cook 10 minutes at 10 pounds pressure. Reduce pressure under cold running water. Add celery and onions. Cook 2 minutes at 10 pounds pressure. Reduce pressure under cold running water. Add mushrooms with liquid. Mix soy sauce and cornstarch; slowly stir into hot liquid. Cook and stir until thick and bubbly. Add bean sprouts. Serve over rice. Makes 6 servings.
