APRICOT-BRAN BREAD 
Boiling water
1 c. finely snipped dried apricots
3 tbsp. sugar
1 1/2 c. flour
1/2 c. sugar
3 3/4 tsp. baking powder
1 tsp. salt
1 1/2 c. whole bran cereal
1 c. milk
2 beaten eggs
1/3 c. cooking oil

Pour enough boiling water over snipped apricots to cover, let stand 10 minutes. Drain well.

Combine apricots and the 3 tablespoons sugar. Stir thoroughly the flour, 1/2 cup sugar, baking powder and salt. Mix bran cereal, milk, eggs and oil. Add to flour mixture, stirring just until moistened. Gently stir in apricot mixture. Turn into greased 9x5x3 inch loaf pan. Sprinkle top with a little additional sugar. Bake at 350 degrees about 1 hour. Makes 1 loaf.
