PINEAPPLE UPSIDE DOWN PUDDING 
1 1/4 c. flour
6 tbsp. butter
1/3 c. plus 1 tbsp. sugar
2 eggs
1/2 tsp. baking powder
1 tbsp. milk or water
3 pineapple slices
2 tbsp. golden syrup, maple
2 cherries

Preheat oven to 350 degrees.

Cream sugar and butter, add eggs gradually. Mix baking powder into the flour. Fold flour into mixture using spatula in figure 8. Use 8 inch round cake pan. Put 2 tablespoons syrup in pan. Place pineapple slices in a triangle. Cut cherries in half and place smooth side down arranged with pineapple. Pour cake mixture on top. Bake 30 minutes. Cool and serve with custard.
