SOUTHERN PECAN OATMEAL CAKE 
1 1/2 c. boiling water
1 c. oats (quick cooking)
1/2 c. butter
1 c. brown sugar
1 c. sugar
2 eggs
1 1/3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt

Pour boiling water over oats. Add butter and let stand until butter is melted. Stir in sugar, eggs and sifted dry ingredients. Turn into greased cake pan, about 9 x 12 inches and bake at 350 degrees for 30-35 minutes.

TOPPING:

6 tbsp. butter, melted
1/2 c. brown sugar
1 c. chopped pecans
1/4 c. evaporated milk

While cake is still warm, spread with topping mixture and place under broiler until icing bubbles and toasts to golden brown.
