VEAL PARMIGIANA 
4 thin cutlets
3 eggs
1/2 c. parmesan
Pepper to taste
1 c. flour
1 c. bread crumbs
1 c. olive oil
1 c. tomato sauce
6 slices mozzarella cheese

Beat eggs, dip veal in flour, then in eggs, then bread crumbs. Heat oil, brown coated veal well on both sides.

Drain on paper towels. Place 2 cutlets on baking dish. Cover with layer of tomato sauce, pepper, parmesan, cutlet, tomato sauce, pepper, parmesan, 3 slices of mozzarella cheese.

Bake at 500 degrees for 5-10 minutes. Serves 2.
