COLD HORS D'OEUVRES 
Wrap thin strips of boiled man or prosciutto around honeydew and/or cantaloupe balls that have been dipped in lemon or lime juice. Serve cold on toothpicks.

STUFFED HAM ROLLS:

Season soft cream cheese with chopped onions, chives, and parsley or 2 tablespoons red pepper relish. Spread on thin ham slices. Roll up slices, chill, cut into thirds or halves.

CHEESE AND CHIVE BALLS

Mix equal parts of grated Swiss and minced ham. Add 1 egg yolk, salt and dry mustard to taste. Mix well and form into small balls. Roll in chopped chives, chill until firm. Serve with toothpicks.

STUFFED GOUDA:

Cut off the top from a large Gouda, scoop out the cheese, leave shell intact. Shred the cheese and blend with 3 ounces soft cream cheese, 1/2 cup milk or half and half, Worcestershire sauce, chopped stuffed olives, onion salt to taste. Mixture will be lumpy, pack into Gouda shell, cover and chill. Serve with crackers.
