PUMPKIN APPLE STREUSEL MUFFINS 
2 1/2 c. flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, slightly beaten
1 c. solid pack pumpkin
1/2 c. vegetable oil
2 c. finely chopped apples

In large bowl, combine first 5 ingredients, set aside. In medium bowl, combine eggs, pumpkin and oil. Add liquid ingredients to dry ingredients. Stir just until moist. Stir in apples, spoon batter into greased muffin cups. If desired, sprinkle Streusel Topping over batter. Bake at 350 degrees for 35-45 minutes or until toothpick comes out clean. Makes 18.

STREUSEL TOPPING:

In small bowl, combine 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon ground cinnamon. Cut in 4 teaspoons butter until mixture is crumbly.
