PIQUANT CASSEROLE 
2 c. diced cooked ham
1 c. chopped onion
3/4 c. uncooked rice, UNCLE BEN'S®
1 (28 oz.) can tomatoes
1 green pepper, chopped
1/2 c. salad oil
1 (9 oz.) can pitted ripe olives, sliced
1 bay leaf
1 tsp. salt
1/4 tsp. pepper
Dash Creole seasoning

Mix ingredients, turn into a 2 quart casserole. Cover. Bake at 350 degrees for 1 hour and 15 minutes. Stir twice during baking time.
