QUICK APPLE CAKE 
1 c. self-rising flour
6 tbsp. sugar or sugar substitute equivalent
2 tbsp. butter
2 egg yolks
1/2 c. milk
4 apples, peeled & thinly sliced
1/2 tsp. cinnamon
1 tsp. grated lemon rind

Sift flour and sugar together. Cut in butter. Beat egg yolks and combine with milk. Stir into the flour mixture; beat well. Pour into a greased round cake pan and cover with the apple slices. Then sprinkle with cinnamon and lemon rind. Bake at 400 degrees for about 35 minutes. Serve with sugar free ice cream.
