FRESH APPLE MUFFINS 
1 egg
1/2 c. milk
1/4 c. vegetable oil or melted shortening
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. grated raw tart apples, unpared

Heat oven to 400 degrees. Grease bottom of muffin cups or use paper baking cups. Beat egg with fork. Stir in milk, oil, and grated apples. Blend dry ingredients; stir in just until flour is moistened. Batter should be lumpy. Do not overmix. Fill muffin cups 2/3 full. Bake 25 to 30 minutes or until golden brown. Muffins will have gently rounded and pebbled tops. Loosen immediately with spatula. Serve warm. Makes 12 medium muffins.
