BEEF STROGANOFF 
1 1/2 lbs. beef filet or sirloin, cut into strips, 1 x 1/4 inch
2 tbsp. olive oil
2 tbsp. butter
1 c. thinly sliced and coarsely chopped onion
1 1/2 c. sliced mushrooms
1 c. beef consomme or stock
1 1/2 tbsp. flour
1 tsp. salt
1/2 tsp. whole caraway seeds
Dash of nutmeg
2 c. sour cream

Trim all fat from the meat. Heat oil and butter in electric skillet at 325 degrees and quickly brown meat; remove from skillet. Reduce heat to 200 degrees and add onions and mushrooms; saute until soft.

Add meat and continue cooking for 10 minutes; add consomme and cook for 30 minutes. Mix flour and seasonings with sour cream and add to meat mixture. Cook slowly until thick, but do not boil.
