SEVEN LAYER SALAD | |
1 head lettuce 1 c. diced celery 4 hard-boiled eggs 10 oz. frozen peas 1/2 diced green pepper 1 sweet onion 3 oz. bacon bits 2 c. mayonnaise mixed with 2 tbsp. sugar 4 oz. grated Cheddar cheese Have ingredients dried on paper towels. Break dry lettuce in small bits and put in long cake pan. Add diced celery. Cut up 4 eggs. Pour boiling water over peas still in package. Put on paper towels and add to other ingredients. Cut green pepper (may omit, if desired). Add sliced onion and bacon bits. Spread the stirred mayonnaise and sugar over the top and sprinkle the Cheddar cheese over it. Do not salt anything. The secret is to have everything dry so it will not run. May be made day before or 8-12 hours before eating. Anything left over is still fresh and not wilted. Fills 9x12 inch cake pan to top. |
