THUMBPRINT COOKIES 
1 c. flour, sifted
1/4 tsp. salt
1/2 c. shortening
1/4 c. brown sugar
1 egg, separated
1/2 tsp. vanilla
Finely chopped nuts
Candied cherries, icing or jelly

Sift together flour and salt. Cream shortening, gradually adding sugar, until light and fluffy. Blend in egg yolk and vanilla. Add flour and salt, mixing thoroughly. Roll dough in 1" balls. Dip in slightly beaten egg white. Roll in nuts and place about 1" apart on baking sheet. Bake for 5 minutes at 375 degrees. Remove and quickly press thumb gently on top of each cookie. Return to oven for about 8 minutes longer. While still warm add cherries, icing or jelly to thumbprints.
