REFRESHING EASY HORCHATA (RICE
MILK)
 
This quick, healthy drink is thirst quenching and filling at the same time. It makes a great instant breakfast that is good before a long day.

rice
oil
ice
milk (powdered or fresh)
brown sugar
cinnamon
nutmeg
vanilla

Wash rice thoroughly to remove all starch. Then sauté the rice in a bit of oil until the grains start to stick together and turn golden. Then add a lot of water - at least 4 parts water to 1 part of rice. Quickly bring the mixture to boil at the highest heat possible, stirring frequently. Then put on the lid and let it cook slowly over the lowest heat possible, without removing the lid.

When you no longer hear the bubbling sound of the rice, turn it off and let it sit and steam. Then refrigerate overnight. The rice will be very mushy.

Add ice, cooked rice, milk, sugar, water, cinnamon, nutmeg, and vanilla to blender, and blend thoroughly.
