VERY ORANGE SALAD 
4 c. shredded carrots
1 orange, peeled and chopped
1/4 c. orange juice
2 tbsp. lowfat plain yogurt
2 tbsp. raisins
Dash of freshly grated nutmeg
Spinach or lettuce leaves

In a medium bowl, combine carrots and orange. In a small bowl, combine orange juice and yogurt; mix well. Pour over carrot and orange mixture. Add raisins and nutmeg; toss to mix. Chill. On serving plates, arrange spinach leaves. Spoon salad onto prepared plates. Makes 4 servings.
