GRANDMA'S APPLE CAKE 
1 tbsp. butter
1 beaten egg
1/2 tsp. nutmeg
1 tsp. baking soda
3 c. diced apples (that hold their shape)
1 tsp. vanilla
1 c. sugar
1/2 tsp. cinnamon
1/2 tsp. salt
1 c. sifted flour
3/4 c. chopped walnuts or pecans

Cream butter and sugar. Then add egg and mix well. Sift dry ingredients together. Add to creamed mixture. Stir in apples, nuts and vanilla. Pour into greased 8x8x2 inch pan. Bake at 350 degrees for 40-45 minutes. Serve hot or cold with whipping cream.
