SURPRISE MEAT BALLS 
1 lb. ground meat
2 slices stale bread, crumbled
1 egg
2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. red pepper
1 tsp. onion powder
2 tsp. parsley flakes
2 med. potatoes, washed, peeled and cut into 1-inch pieces

Mix all ingredients together except potatoes. Shape into balls about the size of a 50 cent piece and insert 1 cube of potato into each meat ball, making sure meat is closed all around the potato cube. Fry in deep fat until golden brown. Serve warm. Serves 4 to 6 people. Good with macaroni and cheese or as appetizers.
