RIPE CUCUMBER PICKLES | |
Ripe yellow cucumbers 1 c. water 1/2 tsp. mustard seed 2 c. white vinegar 1 c. sugar 1 tsp. mixed spices Peel cucumbers. Cut in halves, lengthwise. Scrape out seeds with a spoon. Cut each half in quarters and soak overnight in water. Drain and make a syrup of vinegar, water, sugar, mustard seed and mixed spices. Bring to a boil. Add cucumbers and boil about 3 minutes. Pack solidly in clean jars. Add 1 teaspoon salt and 1/2 small onion sliced to each quart. Cover with boiling syrup. Seal. |
