COLD GRAPEFRUIT SOUFFLE | |
1 env. unflavored gelatin 2/3 c. sugar, divided in half 1/8 tsp. salt 4 eggs, separated 1 1/2 c. fresh grapefruit juice 1/4 tsp. grated grapefruit rind 1/2 tsp. chopped candied ginger, optional In medium saucepan mix gelatin, 1/3 cup sugar, and salt. In medium bowl beat together egg yolks and juice; stir into gelatin mixture. Stir constantly over low heat until mixture thickens slightly (about 5 minutes). Remove from heat; stir in rind and ginger. Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon. Beat egg whites until soft peaks form. Gradually add 1/3 cup sugar and beat until stiff peaks form. Fold into grapefruit mixture; turn into 1-quart dish. Chill until firm. Garnish with grapefruit sections and mint leaves in individual dishes. Only 112 calories per serving. Serves 8. |
