ZUCCHINI BARS | |
1. 3 eggs 2. 2 c. sugar 3. 1 c. melted butter 4. 2 c. grated, peeled raw zucchini 5. 1 tbsp. vanilla 6. 2 c. flour 7. 1 c. whole wheat flour 8. 1 tsp. salt 9. 1 tsp. baking soda 10. 1/2 tsp. baking powder 11. 1 tbsp. ground cinnamon 12. 1 c. chopped walnuts TOPPING: 1/2 c. wheat germ 1/2 c. brown sugar 1 tsp. cinnamon Beat 1 until light and foamy. Add 2 through 5 and mix lightly but well. Combine 6 through 11 and add to 1 through 5. Stir until well blended. Add 12. Pour into 12 x 17 pan. Combine topping ingredients and sprinkle over batter. Bake at 350 degrees for 15 to 20 minutes. Cool on a rack. |
