ZUCCHINI CARROT BARS 
4 eggs
2 c. sugar
1 c. oil
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 1/2 c. coconut
1 1/2 c. grated raw zucchini
1 1/2 c. grated raw carrots
1 1/2 c. chopped nuts
1 c. chopped raisins or dates
1 tsp. salt

Beat the eggs, sugar and oil until light. Add rest of ingredients and mix well. Bake in two 9x13 inch pans in 350 degree oven for 40-45 minutes. Frost with butter frosting.
